Oyster and Pork Intestine Vermicelli

Instructions
1. | Refer to Handle Large Intestine to cook the intestine and cut it into small pieces. Soak the baked red vermicelli in cold water until soft. Drain the water and cut the noodle into 5” segments. Rinse the oysters and drain the water. Cut them into small pieces if using large ones. |
2. | Prepare the Dark Potage Base. |
3. | Boil the part A (bonito soup base) from the Dark Potage Base in a pot. Add the vermicelli, large intestine and part B (seasonings) from the Dark Potage Base; cook over medium low heat for 20 minutes. |
4. | Coat the oyster with 1 tbs. of corn starch. Add the oyster to the soup and stir so the oyster and large intestine are evenly distributed. |
5. | Mix the corn starch and water (Part C from the Dark Potage Base) in a small bowl. Add the starch water to the soup and stir until the soup is thick. Turn the heat to low. |
6. | Mix in the part D (Fried shallot, garlic water and dark vinegar) from the Dark potage base part D. Serve with chopped cilantro. |

做法
1. | 參考大腸處理將大腸煮到你喜歡的軟度後切成小段。麵線用水泡軟後濾乾,剪成12cm/4.5"小段。生蠔用水沖洗乾淨後濾乾。如果使用大的生蠔,將之切成小塊。 |
2. | 準備濃羹湯頭。 |
3. | 在鍋裡煮滾濃羹湯頭A料(柴魚湯頭)。加入麵線,大腸和濃羹湯頭B料(調味料)用中小火煮20分鐘。 |
4. | 生蠔裹上1大匙芡粉後丟進湯裡。攪拌麵線讓大腸和生蠔散佈均勻。 |
5. | 將濃羹湯頭C料(太白粉和水)調勻後倒入湯內。不斷地攪動湯直到湯變稠後關小火。 |
6. | 將濃羹湯頭D料(紅蔥酥,大蒜水和黑醋)加入湯內稍微攪拌一下即可。食用時加上香菜。 |
